Bread
In 1 tbsp oil, briefly toast bread until golden (pan or oven at 180°C, 6-8 min). Set aside.
Garlic base
In a pot, heat 2 tbsp oil, add garlic slices, and sauté over low heat for 1-2 minutes until lightly browned (do not burn). Add paprika, quickly stir (just a few seconds).
Adding liquid
Immediately pour in broth, season, add wine/sherry (if using). Bring to a boil and simmer.
Bread into soup
Add toasted bread, simmer for 6-8 minutes until soup thickens and bread softens. Adjust seasoning with soy sauce and spices.
Eggs
Create small whirlpools in the gently simmering soup using a spoon, and crack eggs into them one by one. Poach for 2-3 minutes according to preference (yolk can remain runny).
Serving
Pour into bowls, top each portion with an egg. Sprinkle with herbs and serve immediately.
Tip
Ak chceš „sýtejšiu“ verziu, na začiatku s cesnakom krátko orestuj pár kociek slaniny alebo chorizo. Na ľahkú, postnú verziu použi zeleninový vývar a pridaj štipku rímskej rasce.
