Tenderize the meat, season with salt and pepper on both sides, and coat in plain flour. Sear on both sides in a pan with butter and set aside at the bottom of a pressure cooker.
In the drippings, sauté the onion and add the bacon. Once everything turns dark brown, add the broth, mix well, and pour into the meat pot. The meat should be completely submerged, add water if needed. Add pickles, spices, and soy sauce, close the lid, and cook for about 45 minutes.
Remove the meat, add sterilized pickles to the sauce, and thicken with a mixture of water and plain flour. Let it simmer for another 10 minutes, season to taste, return the meat, and let it heat through.
Serve with rice.
Tip
Tip: When we had guests at home, this recipe was always a sure thing – juicy Znojmo pork slices, stewed with onions, bacon, and those small pickles that added the right taste of home. And when the kids were at the table, I made a smaller portion without bacon – it also disappeared in the blink of an eye.
