It smells of garlic, beetroot, and dill, has a beautiful red color, and warms the soul. Put the meat in cold water, add salt, bay leaf, and spices. Cook slowly for about 1.5 hours until the meat is tender.

Meanwhile, sauté onions, carrots, and grated beetroot in a pan. Add tomato paste, sugar, and vinegar - this will preserve the beautiful red color.

Add diced potatoes and cabbage to the broth, cook for 10-15 minutes.

Then add the sautéed vegetables with beetroot and pressed garlic to the broth. Cook for another 10 minutes.

At the end, add the diced meat and let the soup simmer for a few minutes to blend the flavors.

If you want the borscht to be even more flavorful, add a small piece of smoked meat - it will give it a deeper taste. And never forget a spoon of sour cream and fresh dill - that's the finishing touch that makes it perfect.
