I remember that my grandma always made this soup when 'something needed to be cooked from nothing'. With a few ingredients she had at home, she could conjure up a warm lunch for the whole family. This pea soup tastes like childhood - simple, honest, and slightly tangy, just like it used to be.

Preparing peas

Rinse the peas, cover with cold water, and let soak for at least an hour. Then cook them at home (about 30-40 minutes).

Roux

In butter or oil, sauté finely chopped onion, add flour, paprika, and immediately pour in water to prevent burning.

Combining

Add cooked peas, bay leaf, marjoram, and garlic. Season with soy sauce, sugar, and vinegar. Cook for another 10 minutes.

Softening

Finally, stir in sour cream and let it simmer briefly.

TIP

If you want the soup to be thicker, blend only half of the peas and leave the rest whole - it will blend beautifully. And with toasted bread, it tastes the best!
