I cooked this soup when it cooled down outside and everyone at home wanted something 'by the spoonful'. Something that warms, satisfies, and fills the kitchen with such a fragrance that the whole family suddenly gathers at the table. It's a simple soup, but it has everything - potatoes, carrots, sausages, and a delicate creamy cheese that beautifully softens it.

Base

Heat oil in a pot, add finely chopped onion, and sauté until golden brown. When it starts to sizzle, add crushed garlic and stir. (I personally never let garlic brown - it turns bitter and ruins the taste.)

Vegetables

Add chopped potatoes, carrots, and spring onions. Season with salt, pepper, and sprinkle with a bit of thyme. Pour in vegetable broth and cook for about 20 minutes until the potatoes soften.

Creaminess

When everything is soft, set aside a few vegetable pieces (for garnish). Blend the remaining soup with an immersion blender until smooth.

Sausages

Slice the sausages into rounds and sauté them separately in a pan without oil. Add them to the soup and mix well.

Serving

Top with pieces of whole vegetables, sprinkle with parsley, and serve with fresh bread.

TIP

For a more pronounced flavor, add a bit of sweet paprika to the onion sautéing. And personally, I like to lightly brown the sausages - they add an amazing aroma to the soup.
