Homemade Bean Soup with Smoked Meat from the Cauldron

Beans
Rinse the beans and let them soak in water overnight. In the morning, cook them in clean water for about 30-40 minutes until they start to soften.
Base
In lard, fry the onion until golden brown - add garlic, finely chopped carrots and parsley, and sauté, sprinkle with flour and paprika - create a roux. Pour in the broth from the smoked meat, stir, and add the beans, vegetables, and spices.
Meat
Put the smoked meat (or ribs) in the cauldron until it softens. Then remove it, cut it into pieces, and return it to the cauldron. Now add the potatoes.
Cooking
Add bay leaf, marjoram, and cook until everything softens beautifully and the flavors blend. Add cooking cream.
Seasoning
Finally, season with marjoram, soy sauce, and spices. Serve with fresh bread and enjoy your meal.
TIP
If you want an even richer flavor, add a few slices of homemade sausage and a bit of smoked paprika to the bean soup. And if you cook it in the cauldron - let it rest by the fire. Then it will get that true 'smoky soul'. ????
