Cook a bag of frozen peas in 1 liter of water with 1 tablespoon of salt. When it starts boiling, reduce the heat and simmer for about 5 minutes.

Then strain through a sieve and reserve the broth. In a pot, melt about 3 tablespoons of butter, finely chop 1 onion, add 3 tablespoons of flour, mix to make a roux, dilute it with about 1 cup of cold water and then add about 2/3 of the pea broth.

Thoroughly mix and simmer for at least 10 minutes. Take about half of the peas and blend them in a blender with the remaining broth.

Pour the mixture into a pot, add the rest of the peas, season with salt and pepper to taste. Serve garnished with sour cream and fried croutons.
