Beef Broth

Wash the beef, place it in a pot, and cover it with cold water. Sauté the halved onion and garlic in a pan for about 5 minutes. Add to the pot and bring to a boil.

Clean the root vegetables and add them to the pot. Add salt, whole black pepper, whole allspice, beef bouillon, and fresh parsley root. Simmer for 3 hours over low heat. Add water as needed.

Semolina Dumplings

Let the butter warm up to room temperature and then whisk it in a bowl until fluffy. Season with salt and a small pinch of nutmeg. While vigorously stirring, add the egg. Sprinkle semolina on top, mix well, and smooth the surface. Cover with foil and let it rest for 15 - 20 minutes.

Using 2 tablespoons of the mixture, dipped in hot water, shape the dumplings. Place them on a lightly oiled board or plate according to preference and let them rest briefly (this will make the dumplings even nicer). In a large pot, bring salted water to a boil. Add the dumplings, bring to a boil, then let them simmer over low heat for 10 - 15 minutes. Occasionally turn the dumplings gently.
