Today, I was craving for that authentic, honest homemade sauerkraut soup with smoked meat and sausage - the kind that fills the whole kitchen with aroma and warms even on the coldest day. I prepared the recipe simply so that anyone who loves traditional Slovak flavors can handle it. All you need is good cabbage, honest smoked meats, and a little patience - the result is worth it.

Smoked Meat

Place it in a pot, cover with water, and cook for about 40 minutes until tender. Then remove and cut into pieces. Reserve the broth.

Cabbage

Rinse the sauerkraut (according to sourness), chop it, and add it to the broth along with bay leaf, spices, and caraway seeds. Cook for 30-40 minutes.

Base

In fat, sauté finely chopped onion, add flour, make a light roux, and sprinkle with ground paprika. Stir briefly and add some broth to prevent lumps.

Combining

Add the roux to the sauerkraut soup, stir, add the chopped meat, slices of sausage, and garlic. Let it simmer for another 20 minutes to blend the flavors.

Seasoning

Season with salt to taste, you can also add tomato puree for a subtle red hue and fuller flavor.

Serving

Serve hot sauerkraut soup with a spoon of sour cream and a slice of fresh bread.
