Traditional Lentil Soup with Sour Cream

This lentil soup was always made by grandma after Christmas. She used to say 'lentils bring money', so we ate it with a big slice of bread and with faith that the next year would be prosperous. But even if it wasn't - the taste would be worth it.

Preparing lentils

Rinse the lentils and let them soak in water for at least an hour. Then cook them at home (about 30 minutes).

Base

Sauté the onion in oil, add flour and make a light roux. Sprinkle with paprika, stir and pour in water from the lentils.

Finishing

Add cooked lentils, bay leaf, marjoram, and garlic. Season with salt, vinegar, and a little sugar. Finally, add sour cream and simmer for a few more minutes to blend the flavors.

Serving

Serve with a slice of fresh bread or with a piece of smoked meat or homemade sausage.

TIP

Sometimes I make it with sausages or sausage, but sometimes completely without meat. But it must always be slightly sour - just like grandma used to cook it.
