We were at home after a long day and everyone was getting hungry. There was no time for elaborate cooking, but I wanted it to be more than just 'anything'. In the fridge, I found spinach and some leftover cheese. So I made spaghetti with spinach-cheese sauce - quick, simple, but with a flavor that surprised even me.

Instructions
1
Spaghetti
Cook the spaghetti in salted water according to the package instructions. (I always save some pasta water - it helps when the sauce is too thick.)
2
Melt butter in a pan, add crushed garlic and sauté briefly. Then add spinach and cook until wilted. Pour in cream, season with salt, pepper, and add a pinch of nutmeg.
3
Add cheese and let it melt. Then add the cooked spaghetti to the pan and mix. If needed, add some pasta water to make the sauce creamy.
4
If using chicken breasts, sear them separately in a little oil, season with salt, pepper, and add at the end.

My TIP
For a milder flavor, use mozzarella, for a stronger one - parmesan. And freshly ground pepper is a small detail that makes a big difference.
