Sauté onion in butter, add garlic and spinach. Cook until the water evaporates. Season with soy sauce, spices, and nutmeg. Then add ricotta and mix.

Bechamel

Melt butter in a saucepan, add flour, stir briefly, and gradually pour in milk. Stir until thickened. Season with soy sauce, spices, and a pinch of nutmeg.

In a baking dish, layer in order: thin layer of bechamel lasagna sheets spinach mixture again bechamel + cheese Repeat until the dish is full. Finish with bechamel and cheese on top.

Bake in the oven at 180°C for about 35-40 minutes, until the top is golden and crispy.
