Meat

In a bowl, mix crushed garlic with soy sauce, add rosemary and black pepper, and rub this mixture thoroughly into all portions of the meat, place in a bowl and let it rest in the refrigerator, preferably for 24 hours.

Then wash each portion of meat thoroughly under running water to rinse off excess soy sauce and place the legs in a smaller baking dish. Pour melted lard over it so that everything is submerged below the surface.

Cover the dish and place it in the oven at 130°C for 5 hours. Remove the meat and place it skin side down in a pan and sear until browned. Dust with flour, pour in a bit of bone broth, and simmer lightly.

Dumplings

Mix bread rolls with grated potatoes and soy sauce and let it rest for 5 minutes, then add eggs, mix well, and thicken with breadcrumbs. Form smaller balls from the mixture (about 5cm in diameter) and cook in boiling salted water for about 25 minutes.

Cabbage

Heat oil in a pan, sauté onions, sprinkle with sugar, and let it caramelize.

Then add the cabbage, season with salt and pepper, add vinegar, and simmer for about 20 minutes covered. Then pour in red wine, add apple, mix, and simmer again until the cabbage is almost tender.

Thicken with grated potatoes and let it simmer. Season with soy sauce and spices. It is best to let the cabbage rest in the refrigerator overnight.
