Baked chicken is definitely a favorite Sunday lunch. It's really nothing simpler and if I baked chicken every week, it can always look different because the side dishes can be combined in any way. Today it was simply baked chicken thighs, roasted mini potatoes, and a warm vegetable salad.

Wash the chicken thighs, season with poultry seasoning, and place in a baking dish. Add cleaned and halved shallots, place a thin slice of butter on each thigh, pour a small amount of water, and bake at 180 degrees.

During baking, you can turn the thighs, baste with drippings, or add more water. The meat is done when it is golden brown with a crispy crust, which takes about 1 to 1.5 hours.

Blanch the vegetables briefly, rinse with cold water to preserve their color, and then sauté gently in a bit of butter.

Boil the potatoes with skin, peel, season with salt, and quickly fry in a little oil. But as I mentioned, the side dish can be varied, everyone can make what they like... Boiled potatoes, rice, pasta, etc.
