Slice the hearts into thicker slices and remove the bloody deposits under running water.

In a pot, add bacon sliced into thicker strips along with finely chopped onions and sauté for about 3 minutes. Add the meat slices and sear them on high heat from all sides. Add spices, rosemary, lightly salt, and pour in the beer. Let half of the beer evaporate over high heat without a lid. Pour in 250 ml of hot water and cover the pot with a pressure lid. Cook over low heat for 40 minutes from boiling.

Cool the pot, open it, and add a water-diluted flour to the tender meat. Adjust the sauce thickness to your liking and season with soy sauce and ground spices as needed. Serve with bread, rice, or dumplings as a side dish.
