Juicy Chicken Breasts with Mozzarella and Rice

Slice the chicken breasts into thicker slices (about 1.5-2 cm) to keep them juicy.
In a bowl, mix oil, soy sauce, black pepper, paprika, garlic, oregano, and lemon juice.
Mix the meat with the marinade and let it sit for at least 10 minutes (the longer, the better).
Heat butter in a pan and sear the meat on both sides until browned.
Pour in 100 ml of broth, cover, and let it simmer gently for 8-10 minutes.
Place a slice of mozzarella on each piece of meat and cover the pan for 1 minute - the mozzarella will soften beautifully and melt.
Serve with cooked rice and sprinkle with fresh parsley.
Tip
Tip: If you want really juicy meat, don't overcook it. Chicken breasts love heat and steam – so a quick sear followed by braising in their own juices is ideal. And if you want a bit of a "gourmet" feeling, add a thin slice of tomato before the mozzarella layer – it will create a completely different aroma.
