Chicken

In a deep pan, heat oil. Season and spice the meat chunks and cook over medium heat for 4-5 minutes until golden brown. Remove to a plate.

Base

In the same pan, add onion, sauté for 2-3 minutes until translucent. Add garlic and sauté for 20 seconds.

Orzo on fat

Add orzo, stir for a minute to coat and slightly toast.

Pouring

Add broth, mix in cream and mustard, season with salt and pepper. Return chicken chunks, add dried tomatoes. Bring to a gentle boil and cook uncovered for 10-12 minutes, stirring occasionally (orzo tends to stick).

Finishing

When the orzo is al dente and the sauce is creamy, stir in Parmesan, let it melt. Add spinach - just until wilted (1-2 minutes). Taste, season with salt/pepper and a squeeze of lemon. For extra shine, swirl in 1 tbsp of cold butter.

Serve immediately, sprinkle with extra Parmesan and freshly ground pepper.
