Chicken Breasts with Mushrooms in Spicy Sweet and Sour Sauce

Marinating the meat
Slice the chicken breasts, mix with soy sauce, grilling seasoning, and crushed garlic. Let marinate for about 1 hour in the refrigerator.
Preparing the meat
After an hour, sprinkle the meat with potato starch, mix well, and fry until golden brown in hot oil. Then set it aside.
Sauce base
In the same pan, sauté finely chopped shallots and carrots. Add back the meat, season, and deglaze with chicken broth.
Simmering
After about 10 minutes, add mushrooms, peas, Dijon mustard, sugar, and vinegar. Mix, cover with a lid, and let simmer for another 10 minutes until the sauce thickens slightly.
Serving
Serve with jasmine rice, garnished with parsley and a bowl of fresh chili.
