Baked Chicken Thighs with Herbs and Roasted Potatoes
Ingredients
Instructions
Wash the chicken thighs, pat them dry, and season with salt on each side.
Melt the butter in a bowl, add olive oil, crushed garlic, rosemary, and a few drops of lemon juice. Rub the thighs with this mixture.
Bake in the oven at 190°C for about 60 minutes. Baste them with the juices a few times during baking.
Meanwhile, prepare the potatoes - cut them into wedges, toss with oil, seasoning, and rosemary, and roast them on a baking sheet until crispy.
Serve the chicken thighs with the potatoes and drizzle with the butter and herb juices.
Linda's tip
If you like a more pronounced flavor, add a bit of honey to the butter - it will create a beautiful caramel glaze. And if you want the thighs even juicier, let them marinate for at least an hour before baking.
Tip
Tip: Baked thighs with herb butter are perfect for a family lunch. If you want, add a simple vegetable salad to balance the rich flavor of the meat.
