This recipe belongs to those I make when I want the meal to be exceptional. Beef is slowly cooked with wine, vegetables, and spices until it's completely tender. The whole kitchen smells so good that even those who usually skip lunch gather at the table. This is a dish that deserves time - but the result is worth it.

Cut the meat into larger pieces, season with salt and spices. Sear it on oil from all sides until browned. Set aside.

Add butter, chopped onion, and root vegetables to the pan drippings. Sauté until golden brown.

Add garlic, tomato paste, and after a while, deglaze with wine. Let the wine simmer for a few minutes to evaporate the alcohol.

Return the meat to the pan, pour in beef broth, add bay leaf and spices.

Simmer covered for about 2 hours until the meat is tender.

If you want a thicker sauce, lightly dust it with flour or blend it at the end.

Potato Mash

Cook potatoes in salted water, drain, add butter and warm milk, and mash until smooth.

Occasionally, add a spoonful of cranberry jam to the sauce - it gives it a beautifully subtle sweetness and deeper flavor. And if you have a little wine left, definitely pour yourself a glass with lunch :)
