Cut the chicken breast into smaller pieces, season with salt, pepper, and let it marinate for a while.
Heat oil in a pan, add onion, bell pepper, and sauté briefly. Then add the meat and cook until it browns.
Add pineapple with juice, ketchup, soy sauce, vinegar, and sugar. Stir and let it simmer for about 10 minutes.
In a glass, mix cornstarch in a small amount of water and pour into the pan - let it boil until the sauce thickens.
Serve with freshly cooked rice.
Linda's tip
If you want the dish to have even more flavor, add a few slices of fresh ginger or a bit of chili - but only to the portion you and your spouse are having, not for the kids.
Tip
Tip: Sweet and sour chicken is excellent even the next day – just heat it up and the sauce will be even better. It pairs well with a light semi-sweet white wine or lemonade with ice if you're in the mood for something non-alcoholic.
