Chicken or Pork Roast / Roast Meat is one of those dishes that you either love or you have to work your way towards. I remember when my mom made it, the kitchen smelled of onions and fat, and I thought to myself that it surely doesn't taste as good as it smells. Until I tried it once with rice and pickles... since then, it's the taste of childhood for me.

Onions

Finely chop the onions and fry them in oil until golden brown. (If you use lard, the flavor will be even more authentic.)

Roast

Wash, clean, and pat dry the chicken roast. Personally, I lightly dust it with flour - it seals better and remains juicy.

Sautéing

Add to the onions and sauté for about 5-7 minutes until thickened. Add salt, pepper, paprika, and marjoram. (You can also add a little water if you want more sauce.)

Serving

Best served with steamed rice, noodles, mashed potatoes, or fresh bread and pickles.

TIP

Do not salt the roast right at the beginning - it could become tough. I add salt only at the end, when it's cooked and lightly browned.
