I love this recipe because it practically cooks itself. I made upside-down schnitzels for the first time when I wanted to prepare something 'like mom used to make' but without having to stand by the stove for an hour. And that's the beauty of them - everything goes into the oven, covered, and the rest is taken care of by the oven. In the meantime, I manage to make cucumber salad - according to the old family recipe that never disappoints.

Slice the meat and lightly pound it. Season with salt, pepper, paprika, and spread mustard. (I always pat the meat dry with paper first - it splatters less and cooks better.) Arrange the meat in a baking dish, sprinkle with chopped onion and garlic. Sprinkle with flour, drizzle with oil, and pour in broth. Cover and bake at 180°C for about 45-50 minutes.

Mash

Boil the potatoes in salted water, mash, add butter and milk. (I never blend the mash - I like it a bit 'lumpy.')

Cucumber Salad

Slice the cucumber and onion, add salt, sugar, pepper, vinegar, and mix. Let it sit for 10-15 minutes to blend the flavors. (When I have time, I put it in the fridge for a while - it refreshes even more.)

Serving

Place a portion of mash on a plate, top with the upside-down schnitzel with gravy, and serve with a bowl of cucumber salad.

My TIP

If you want the meat to be extra juicy, add a spoonful of butter to the dish before the end of baking. And the salad - the simpler, the better.
