Pound the meat slices, season with salt, pepper, and spread with mustard. Sear them quickly on both sides in a pan until browned.

Add finely chopped onion and garlic to the pan drippings. Sauté until the onion softens and caramelizes gently.

Return the meat to the pan, add broth, and braise covered over low heat for about 35-40 minutes until tender. If the gravy is thin, you can thicken it with a little flour.
