Meat

Slice the tenderloin into 3-4 cm medallions, season with salt and pepper. Heat oil in a pan and sear the meat on both sides (about 2 minutes). Then place in an oven preheated to 180°C and bake for 10-12 minutes.

Sauce

In a small saucepan, pour wine, water, cranberries, mustard, and honey. Cook for 10 minutes until the sauce thickens. Season with a pinch of salt.

Potatoes

Peel, cut into wedges, toss with oil, seasoning, and thyme. Bake on a baking sheet at 200°C for about 25-30 minutes until crispy.

Arrange the potatoes on a plate, place the medallions next to them, and drizzle with cranberry sauce. Garnish with a sprig of herbs.
