Pork Tenderloin in Cheese Sauce with Roasted Potatoes

Today we will cook pork tenderloin with cheese sauce and have roasted potatoes as a side dish. Let's get started :) Remove the membrane from the tenderloin, season with salt. I didn't grind the pepper with salt. In a pan with a drop of butter, sauté the tenderloin for 2.5 minutes on each side over high heat. Then place it in a preheated oven at 170°C for about 8 minutes. Now let it rest for 5 minutes.
Preparing the sauce - add butter to the pan drippings, sauté - add 1 tbsp all-purpose flour, sauté for about 1.5 minutes - pour in milk, add salt, pepper, crushed garlic, 1 tbsp mustard, and 2 large cheese cubes. Stir for about 5 minutes and the sauce is ready. Season to taste if needed.
Preparing the side dish, the potatoes: Clean and chop the potatoes, drizzle with oil and sprinkle with seasoning for American potatoes. Place them on a baking sheet lined with parchment paper in a fan-assisted oven at 190°C for 40 minutes.
