Delicate, fragrant donuts with pumpkin puree, cinnamon, and nutmeg. They are light as a cloud and leave a warm autumn taste on the tongue. You can coat them in cinnamon sugar or fill them with cream - they disappear warm.

Starter

Heat the milk until lukewarm. Add 1 tsp sugar and yeast, let it foam for 8-10 minutes.

Dough

In a bowl, mix the puree, remaining sugar, egg, vanilla, salt, spices, and starter. Add 2/3 of the flour, knead for 2-3 minutes, then gradually add the remaining flour and melted butter. Knead (by hand or with a hook) for 6-8 minutes - the dough should be soft, slightly sticky, but pliable.

Proofing

Cover the bowl and let it rise for 60-75 minutes until doubled.

Shaping

Turn out the dough onto a lightly floured surface, roll out to a thickness of ~1.5 cm. Cut out circles (Ø 7-8 cm) or donuts with a hole (Ø 3 cm in the center). Place on parchment paper and let proof for 20-30 minutes.

Frying

Heat oil to 170-175 °C. Fry the donuts in batches, fry for ~1.5-2 minutes on each side until golden. Remove to paper.

Coating

While still warm, coat in cinnamon sugar, or sprinkle with powdered sugar.

Serving

Best on the day of preparation. Coffee/cocoa pairs perfectly with them.

Baked/airfryer version (lighter): Oven: Brush the top with a little milk/butter, bake for 12-14 minutes at 190 °C until golden. After baking, brush with melted butter and coat in cinnamon sugar. Airfryer: 180 °C, 6-8 minutes; halfway through, brush with butter/oil.

Tip

Ak je pyré vodnatejšie, prepasíruj ho cez sitko alebo pár minút odpar na panvici – cesto bude nadýchanejšie. Do stredu môžeš po vychladnutí naplniť škoricový krém (puding + mascarpone) alebo slanokaramelový. Na extra voňavé šišky pridaj 1–2 ČL javorového sirupu do cesta.
