Prepare a starter with about 300 ml of warm milk, yeast, a pinch of salt, and a pinch of sugar. Let it sit for about 10 minutes.
Add the prepared starter to the dough along with flour, egg, milk, and sugar, and knead the dough well. Let it rise for 45 to 60 minutes in a warm place, covered.
In another bowl, prepare the filling. Mix cocoa, cinnamon sugar, vanilla sugar, and cinnamon. Finally, add melted butter to create a filling mixture.
Once the dough has risen, roll it out and spread the prepared filling on top. Roll it up like a roulade and cut into pieces about 2-3 cm wide. Place the pieces on a baking sheet and put them in a preheated oven at 180°C for 10-15 minutes. The dough will rise further in the oven, so be careful that the cut pieces are not too thick.
Remove the golden-brown nests and let them cool. Serve with pleasure. Enjoy your meal!
