Homemade Dubai Chocolate – Chocolate Dates with Pistachios and Cardamom

Filling the dates
Gently split each date on one side, remove any pits. Insert 2-3 pistachios and 1 almond (or just pistachios) inside. Press to secure.
Flavoring the chocolate
Chop the chocolate. Melt 2/3 of the chocolate with coconut oil over steam (or in 20-second intervals in the microwave). Stir in cardamom, saffron, and a pinch of salt, then add vanilla at the end. Sprinkle the remaining 1/3 of the chocolate (almost 'seeding') and mix until melted — the chocolate will be smooth and glossy.
Coating
Dip filled dates into chocolate using a fork, gently tap off excess, and place on parchment paper. Immediately sprinkle with some chopped pistachios/rose petals.
Setting
Let set at room temperature for 20-25 minutes (or 10 minutes in the fridge).
Serving
Serve at room temperature — the flavors of cardamom and saffron will shine best.
Tip
Tip: If you want a more pronounced "luxurious" accent, add a drop of rose water (0.5 tsp into the chocolate) to the saffron. For a summer version, mix dark chocolate with 20–30% milk chocolate – the sweetness of the dates will balance it beautifully.
