Crackling Triangles with Plum Jam

We love crackling pagach, so I once tried these triangles with plum jam. We fell in love with them and I think I will make a few of them every time alongside the classic pagach.

Sift flour into a bowl. Make a well in the center, pour in a little warm milk. Add sugar, crumble yeast, and mix gently with a fork. Cover and let the dough rise.

Later, when the dough has risen, add 1 egg, salt, remaining warm milk, softened butter, and knead the dough until well worked. Dust with flour, cover and let rise.

Transfer the risen dough to a board, roll out and spread with 1/3 ground cracklings. Fold the dough and let it rise for about 10 minutes. Repeat this process 2 more times.

After the final rise, roll out the dough to about 1cm thick and cut into squares. Place jam in each square and fold into triangles, sealing the edges. Arrange on a baking sheet lined with parchment paper, brush with beaten egg, and sprinkle with poppy seeds, salt, sesame seeds. Bake for about 20 minutes at 200°C.
