First, prepare the crust. Separate the egg yolks from the whites and prepare a snow from the whites. Then beat the egg yolks. Add 5 tbsp granulated sugar to the egg yolks. To the egg yolks, add 5 tbsp all-purpose flour, a pinch of salt, and baking powder. Gradually add Dutch cocoa. Add the egg white snow and gently incorporate the remaining snow. Layer the dough on a parchment-lined baking sheet and bake at 180°C for about 25-30 minutes.
To test if it's done, insert a skewer. If it comes out clean, the crust is ready. I made the crust 3 times with 15 eggs each. I repeated this process 2 more times.
Filling
Blend 500g of mascarpone with powdered sugar. In another bowl, beat whipping cream. Add the beaten whipping cream 500ml to the mascarpone. Gradually add melted cooking chocolate (300g) to it.
Spread the whipped cream on the crust 3 times. Cover the entire cake, decorate with sugar cubes, tubes, and let it set in the refrigerator. Enjoy!
