I had the dough processed and fermented in a bakery (home bakery). From the fermented dough, make balls and let them rest for a while. Then roll out, wrap into croissants and let them ferment on a baking sheet for 40 minutes. Spray with water, place in a preheated oven at 200°C. Bake for 15 - 20 minutes.
