Nothing is more Slovak than honest bryndza dumplings with bacon. When delicate bryndza, hot dumplings, and crispy bacon come together, a dish is created that carries the tradition and taste of home. I make this recipe in a classic way - simply, quickly, and with respect for our roots.

Dough

Peel and finely grate the potatoes and let them rest for a while. Add the egg, flour, and salt. Mix a semi-stiff dough - if it is too thin, add a little flour.

Cooking the dumplings

Press the dough through a dumpling maker into boiling salted water. When the dumplings float to the surface, cook them for another 1-2 minutes, then drain them.

Bryndza mixture

In a bowl, mix the bryndza with cream (or milk) to create a creamy sauce. Add hot dumplings and mix.

Bacon

Cut the bacon into small pieces and fry until crispy. Save the fat - we will use it for drizzling.

Serving

Serve the dumplings drizzled with melted bryndza, sprinkled with crispy bacon and chives.

TIP

For a more intense flavor, use bryndza from Liptov. For a lighter version, you can replace part of the bryndza with cottage cheese - half and half, still excellent!
