In warm milk mixed with warm water, dissolve the yeast and caster sugar and let it ferment.

Let it rest covered in a bowl and knead again for at least a minute. Cover and let it rise for an hour in a warm place.

After rising, shape into buns about 100g each, let rest for 5 minutes and then shape into desired shape (rolls, braids, knots...). Place on a baking sheet lined with parchment paper and let it rise covered for another 45 minutes.

Before baking, sprinkle or brush with water, sprinkle with sesame seeds or coarse salt.

Preheat the oven to 200°C 10 minutes before baking and place a tray of water on the bottom of the oven. Bake in the preheated oven for 8 minutes, then remove the water and bake for another 8 minutes. If you want them less crispy, reduce the temperature slightly in the last 8 minutes.
