Slice the beef meat on the edges several times and gently tenderize. Season with soy sauce, spices on both sides, and coat one side with flour. Cut the onion into strips.
Heat a little oil in a pan, place the meat with the floured side down and quickly sear. Turn it, after 2 minutes lift it again and place it in the pan or baking dish.
Lightly fry the onion in the remaining oil and add fresh butter as needed. Pour in a bit of beef broth. Cover and cook over low heat or in a preheated oven at 180 ° C for 60-90 minutes until tender. Turn it every now and then and add broth as needed.
Meanwhile, slice the cleaned root vegetables into very fine strips and fry them with bacon in a little hot fat. Pour in a little beef broth and steam the vegetables al dente.
Remove the meat from the mold. Mix the flour with sour cream until smooth. Stir into the sauce and season with capers and lemon zest. Let it boil. Arrange and garnish with herbs. Serve sprinkled with parsley. This is served with pasta, fried potatoes, or potato noodles tossed in butter.
