Roast Duck, Red Cabbage, and Homemade Dumplings

1. Rinse the duck, salt it well the night before, and refrigerate. In the morning, salt it again, stuff it with a whole, peeled onion and 1 apple, and place it in a baking dish. Pour water over it and bake covered for 2 hours at 180°C. After two hours, remove it, turn it, and bake uncovered at 200°C for about an hour. Baste with drippings every 15 minutes, and after about half an hour, turn it back.
Remove the outer leaves of the cabbage, chop or shred it, salt it, and let it sit for about half an hour. Finely chop a red onion, sauté it in oil, when browned, add sugar and let it caramelize with constant stirring. Add the cabbage, caraway seeds, and pepper, pour in some water, and let it simmer for about 15 minutes. Season with vinegar at the end.
