Cut the meat into cubes. Sauté the chopped onion in a larger pot with lard until glassy. Add the meat, salt, pepper, ground red paprika, a pinch of caraway seeds.

Sauté for a few minutes, reduce the heat, cover and simmer. The meat will release its own juices, but be careful and add water as needed. When the meat softens, add drained sauerkraut.

Depending on the thickness of the goulash, add water /or not/. At this point, also add finely chopped chili peppers. Cook for another 10-15 minutes, finally add a tablespoon of tomato paste and let it simmer.

Serve the goulash with steamed dumplings or bread.
