Clean and slice the meat into about 1cm thick slices, gently flatten them (no need to tenderize, the meat is tender), season and spice on both sides, arrange the slices next to each other in a baking dish. Sprinkle with fresh onions and garlic, dried onions, marjoram, and rosemary, lightly salt, place butter slices on top, and pour in broth. Seal the baking dish tightly, you can use aluminum foil like I do, and bake at 200 degrees for about 1 and 1/2 hours, then uncover, reduce the temperature to 180 degrees, and bake for another hour, occasionally basting with water, until the meat has a nice color and is beautifully tender. Thicken the juice before finishing with a tablespoon of flour mixed in a tablespoon of softened butter.

Fried potatoes as you like them. Cook cleaned and sliced potatoes with salt. Then sauté them with a little butter. You can also add finely chopped fried onions.
