First, prepare a small container for marinating the meat. Rinse the chicken meat, cut it into strips or cubes, and place it in the prepared container. Season the meat with salt and Mexican seasoning (available in stores). If you don't have this Mexican seasoning, use other spices according to your preference. Once well seasoned, pour soy sauce over the meat and mix thoroughly. Finally, add olive oil. I personally use quite a bit of olive oil, but a light drizzle is enough. Once everything is prepared, let it marinate in the refrigerator for 24 hours to absorb the marinade.
Take a small pot to prepare the rice. I prepare rice as follows: Rinse the rice in a sieve and drain well to remove excess water. Pour about 1 tablespoon of olive oil into the pot and heat the oil over medium heat. Once the oil is sufficiently heated, add the rice and stir-fry it. Season with salt, add marjoram, and pour in water so that the water is about 1 centimeter above the level of the rice. Cover the pot and wait for the water to boil, stir again, and reduce the heat. Let it simmer for about 8 minutes (depending on the amount of rice and water, the more water, the longer). When bubbles start forming on the surface, let it cook for another minute until the bubbling stops, then turn off the heat.
While the rice is cooking, you can use the time to prepare the salad. Rinse the vegetables, chop the cherry tomatoes into small cubes, and place them in a bowl for mixing the salad. Season the tomatoes with salt and seasoning for tomatoes (available at Lidl). Then add chopped bell pepper, cucumber, and spring onion. Mix everything together, add corn at the end, mix again, and the salad is ready :)
Once the salad and rice are ready, all that's left is the meat :) Heat oil in a pan (I use olive oil). When the pan is hot enough, add the marinated meat and fry it briskly on each side until well browned. When the meat tightens and starts to brown, reduce the heat and continue cooking for about 5 to 7 minutes until the meat turns golden-brown. Everything is ready, so just serve on a plate and enjoy.
