I love this recipe when I want to prepare something quick but also looking 'festive'. Pork tenderloin is a delicate meat that can be cooked in a few minutes, and in combination with creamy mustard sauce, it looks like a dish from a good restaurant. At our home, it's a weekend hit - elegant, tender, and yet completely simple.

Clean the tenderloin, slice it into pieces about 2 cm thick, and season them with salt and pepper.

Heat butter and oil in a pan, fry the meat on both sides until browned. Set it aside.

Add chopped onion to the pan, sauté until golden brown, and sprinkle with flour.

Add mustard, pour in broth, stir, and let it simmer briefly.

Pour in the cream, return the meat to the sauce, and let everything simmer together for a few more minutes.

Serve with freshly cooked rice.

If you want a smoother sauce, add a spoonful of honey - it will nicely soften the mustard flavor. I make it this way when I want it to appeal even to children.
