Meat

Clean the tenderloin, slice it into 2-3 cm thick medallions, gently pound them, season with salt and pepper. Heat oil in a pan and sear the meat on both sides (about 2 minutes per side). Then set it aside and cover.

Sauce

Melt butter in a pan, add flour and make a roux. Gradually add milk and cream, stir until the sauce thickens. Add cheese and let it melt. Season with nutmeg, salt, and white pepper.

Combining

Return the meat to the sauce and let it heat for about 5 minutes over low heat to blend the flavors.

Side dish

Cook rice in salted water, soften it with butter at the end. Bake the fries in the oven or fry until golden brown.

Serving

Serve 2 portions of rice, a serving of fries, and the tenderloin topped with cheese sauce on a plate. Or for a big appetite :) Garnish with parsley.
