If you want your pork risotto even more flavorful, add a few drops of lemon juice at the end - it will beautifully enhance the taste of meat and vegetables. And for those who like it slightly spicy, you can add a pinch of ground red paprika or chili.

Prepare the meat

Cut the pork into small cubes. Heat oil (or lard) in a pot and sauté finely chopped onion until translucent. Add the meat and let it brown on all sides.

Seasoning

Add salt, pepper, ground paprika, and pressed garlic. Stir briefly to let the spices release their flavors.

Simmer the meat

Pour in broth or water with bouillon to almost cover the meat. Cover and simmer for about 30-35 minutes until the meat is tender.

Add the vegetables

Towards the end of simmering, add diced carrots, bell pepper, and peas. Cook together for another 10 minutes.

Rice

Rinse the rice and cook it in a separate pot in salted water until half-cooked (about 10 minutes). Then drain it.

Combining

Add the half-cooked rice to the meat and vegetable mixture, stir, and let it simmer for another 10 minutes over low heat to blend the flavors.

Finishing

Remove from heat, add a bit of butter, stir, and let it rest covered for a few minutes. Serve sprinkled with cheese and garnished with parsley.
