Moravian Kolaches filled with Quark Cheese and Jam

In a pot, heat some milk, crumble the yeast into it, add a spoon of sugar and a spoon of plain flour, mix well and let the yeast rise. In a bowl, pour the flour (I mix plain with semi-coarse, but it's not necessary, plain is enough), pour in the yeast, add egg yolks, oil, salt, and the rest of the warm milk and knead a smooth non-sticky dough. Let it rise nicely in a warm place.
Divide the risen dough into 24 pieces, let them rest under plastic wrap for about 10 minutes, then individually fill them with quark cheese like buns, place them on a baking sheet lined with parchment paper seam down, flatten them into a kolache shape and let them rise under plastic wrap for about 30 minutes. Then make a well in each one (I use my grandmother's method with an egg wrapped in a handkerchief), when all wells are made, crack an egg, spread it, and brush the kolaches with it, fill them with jam, brush the edges with egg, and sprinkle the whole with sprinkles. Bake for about 25 minutes at 170 degrees.
