Apple Pancakes with Strawberry Sauce and Whipped Cream

Whisk egg yolks with sugar, add apples, milk, flour with baking powder and cinnamon, and finally fold in stiff egg whites beaten with a pinch of salt. Fry small pancakes in a pan greased with oil until golden brown on both sides. Serve on a plate sprinkled with cinnamon sugar or drizzled with fruit sauce and a dollop of whipped cream. Strawberry Sauce: 1 large cup of canned strawberries, 1 cup of strawberry jam, 1/2 packet of strawberry pudding mix, vanilla sugar, and sugar to taste.
Pour the compote into a saucepan, but leave some liquid in a cup and later mix the pudding powder in it. Add jam and sprinkle with vanilla sugar and about 2 tablespoons of sugar crystals. Simmer on low heat for about 30 minutes. Then pour the mixed pudding powder into the mixture and cook while stirring constantly until thickened, sweeten to taste if needed.
Whipped Cream
2 sour creams (chilled), 2 packets of powdered sugar. Just mix everything together. No need to sweeten, instant powdered sugar is already sweetened.
