Cut the skin off the bacon and cook it in 1.5l of water. Cut the bacon into four slices, set aside. Add peeled and halved potatoes to the boiling water. Season with salt, add bay leaf, pepper, onion-white part, and finely chopped garlic.

Cook until the potatoes are soft. Then remove the potatoes, eight halves, bacon skin, and bay leaf. Blend the remaining potatoes with onion and garlic in the broth. Add sour cream or creme fresh slowly and mix well over low heat. Cut the remaining potatoes into cubes and add to the stew. Let it simmer.

I usually don't thicken the stew with flour, this method is enough for me. Fry bacon slices separately in a pan, along with chopped green part of the onion. Serve the stew on a plate, garnished with fried bacon, onion... You can also add sausage, boiled egg, sunny side up egg... to each according to taste.
