Heat the milk in a pot, take a small portion into a cup, crumble the yeast into it, add a tablespoon of sugar and a little flour, mix well and let the yeast rise. Then pour it into the rest of the milk, add the egg, melted butter, lemon zest, sugar, a pinch of salt, and flour, and mix a smooth dough preferably with a whisk. Cover with a lid and let it rise, the dough should double in size.
Then use a small ladle as a measure. Pour the batter onto a greased pan and fry on both sides until golden brown. Fry small pancakes with a diameter of about 8cm, and from this amount of batter, I made 30 pieces.
Set aside a portion of the juice (to mix with the pudding powder), pour the remaining compote and baby food into a saucepan, add sugar and bring to a boil, then add the mixed pudding powder and cook further. And as the finishing touch, sour cream mixed with whipped cream goes perfectly with everything.
