Finely chop the shallot. Sauté in a little oil in a pan and add soaked dried porcini mushrooms and chicken. Finely chop 1 clove of garlic and Arborio or Carnaroli rice (about 1 large handful per person).

Deglaze with white dry wine, let it reduce, and gradually add strong broth in ladlefuls. Always add more broth as it reduces. Stir frequently.

The rice should be cooked to a slightly crispy texture, not mushy. Season with ground pepper, mix in a handful of Parmesan, and a piece of butter at the end.

The risotto should be creamy but not as thick as Slovak risotto.
