Chicken with Broccoli Sauce and Homemade Wide Noodles
Ingredients
Instructions
Meat
Cut chicken leg meat into strips, mix with a blend of spices (dried garlic, sweet paprika, ground caraway, salt) and let it sit in the fridge for about an hour. Then coat with Solamye and sear in a pan. Finally, drizzle with soy sauce with a bit of water and let it simmer, stirring constantly.
Sauce
2 bags of frozen broccoli, 1 medium onion (finely chopped), 3 cloves of garlic (crushed), oil, 3 tablespoons of all-purpose flour, 1 vegetable bouillon cube, water, 1 jar of cream for cooking, salt, ground black pepper. Cook broccoli in salted water until half-cooked, drain and immediately crush it. Crush into small pieces. Cover with a lid and set aside. Sauté onion in oil, add flour, sauté, then add water. Mix thoroughly, add bouillon cube and simmer gently. Then add garlic, crushed broccoli, salt, ground black pepper, pour in cream and heat gently.
Homemade noodles
2 cups of all-purpose flour, 2 eggs, lukewarm water. Pour flour onto a board, make a well in the center and crack the eggs into it, add a little water (about 1-2 tablespoons) and mix everything with a fork. Then knead with your hands, the dough is quite stiff, but should not be crumbly. If the dough is too dry, add water gradually until smooth.
I let the whole loaf of dough rest for a while under a warm pot. Then I divide it into smaller pieces and pass it through a pasta machine with the appropriate attachment for wide noodles or cut into desired shapes by hand. Let them dry slightly and then cook in salted boiling water until half-cooked. Drain, rinse with cold water, drain again, and mix with oil to prevent sticking.
