Cut the breasts in half lengthwise. You will get 4 slices. Pound each slice, season with salt and pepper. Place a quarter of a boiled egg, a piece of sausage, half a cucumber, and a strip of red bell pepper on each slice. Roll the slices tightly, secure with a toothpick or tie with kitchen twine.
Cook the prepared rolls quickly in oil on both sides until golden brown. Add about 2 dl of water, cover and simmer for about 20 minutes. Then remove the rolls, thicken the sauce with flour as needed. Finally, add butter and mix the sauce.
In another pot, quickly fry the tarragon in a little oil, then add water... One cup of tarragon, two cups of water, and bake uncovered in a preheated oven at 180 degrees. For about 30 minutes. Remove the tarragon from the oven and gently mix. It should break down nicely.
