Rinse the meat, if using pork tenderloin, remove the silverskin, and cut into appropriate cubes. In a large bowl, mix the meat with soy sauce, ground black pepper, Italian seasoning or herbs, dried garlic, and olive oil. Slice the onion into rings and cut into larger pieces. Mix everything together and let marinate for about 2 - 4 hours (or even overnight).
Place the marinated meat on wooden or metal skewers alternating with onion. Be careful, the meat and onion should just touch, not be pressed against each other. Let the prepared skewers sit at room temperature for a while. Then either place them on a baking sheet and bake in the oven or on the grill if using metal skewers. Occasionally brush with remaining oil and seasoning from the marinade while baking and sprinkle with parsley at the end.
Of course, you can also alternate with bacon or sausage.
